Thanksgiving for a Family of 40

I love when Thanksgiving rolls around, it is one of my favourite times of the year! The landscape is beautiful, the family is finally settled into the school routine, and the harvest is so bountiful you can’t help but pour your heart into your Thanksgiving recipes! I’m so lucky to live in an area that is spilling over with fresh fruits and veggies; handpicking your own produce is really a luxury to be thankful for.


Thanksgiving weekend is a time for us to relax with family, play board games into the wee hours, roll in the autumn leaves, go hunting for the perfect pumpkin, let the kids run wild with cousins, and eat… oh the eating, we’re really a family that connects over a tasty dish.


Our Thanksgiving table typically hosts over 40 hungry tummies, so having efficient methods to get everything prepared on time, and tasting its best is on the top of our checklist. As we all gather around the kitchen for the children’s traditional rendition of Johnny Appleseed, the glow in their faces reminds us how thankful we are to be such a close family and how lucky we are to get to spend it together making memories around the year’s tastiest meal. Even with the impending battle of dishes duty just around the corner, we can’t help but be happy.






We can always taste the love in every bit of the meal. Mom always goes the extra mile to prepare our dinners, and never forgets the tiniest of tradition that really make our gatherings so special. When it comes to holiday family dinner recipes, every family has their favourites. For me, it is all about the stuffing. I haven’t met many stuffings I didn’t like, but one of the yummiest Thanksgiving recipes is Sausage, Apple and Cranberry Stuffing. Whether cooked in or out of the bird, it is always a big hit.






Sausage Apple and Cranberry Thanksgiving Stuffing

1 lb. sausage (casings removed and crumbled into bit size pieces)

1/2 cup butter

2 cups chicken stock

1 diced onion

3 apples diced (I like to use cortland or gravenstein)

2 cups of fine chopped celery

3 tsp. poultry seasoning

1 tsp. sage


salt and pepper to taste

1/2 cup cranberries

8 cups cubed crusty bread



In a large saucepan, cook sausage until browned, add celery and onions until tender. Add butter to melt.

Add bread, salt and pepper, spices, cranberries and apples to pan. Combine well, ensure that all bread has been coated in butter.

Bake the stuffing separately, or use to stuff the turkey.

Place the stuffing in a casserole dish, cover and bake in a 325 degree oven, for 45 minutes. Uncover and bake for an additional 15 minutes. Enjoy!
